When young people show an interest in the industry that you have dedicated your life to, we are filled with pride and welcome them with open arms to show them what it is all about.

Will, just 15 years old, sent us an email to ask if he could spend some time in our kitchen to find out what it is really like. He has already spent time in his Grandad’s pub and works every weekend in his local fish and chip shop to gain an insight into working with food and people.

Will initially spent a day with us, watching and helping Lawrence with preparation and observed lunch service. In the half term holidays he once again returned to our kitchen for two days to observe and work under the watchful eye of Lawrence. He peeled and juiced carrots to make our beautiful carrot dressing to be served with our Ravioli starter. He also helped to make lentil, cumin and garlic fritters, shredded and chopped hilda beans and obviously helped do the washing up!! On Friday we gave him the opportunity to bake us all a cake in our kitchen – he of course chose Chocolate Cake, everyones favourite.

We hope Will continues to keep in contact with us and pursue his desire to become a chef. As most people who know Lawrence, he has a genuine passion for food and loves to encourage anyone to cook simple, clean and tasty food.
